Udon/Soba

Udon and soba are noodles that represent Japan, and are food cultures with a long history and deep culture. It is said that udon was introduced to Japan from China between 710 and 794, and soba was introduced from China between 710 and 1192. Over the years, it has taken root in the Japanese climate and has evolved in its own way. There are various types of udon and soba depending on the region, and each has its own history and traditions. For example, Sanuki udon, Inaniwa udon, Izumo soba, and Echizen soba are famous.
